Today, the 89th day after I started, I broke out the limoncello and started filtering it. It certainly smells and looks good! When I'm done filtering I'll see how it tastes.
Update: Holy crap! It's so good! Darn strong, too, considering that it's made with 151 proof grain alcohol.
151 proof...75% alcohol...damned, where did you get the moonshine in CA?

ReplyDelete2 750 ml bottles of Everclear (some use vodka, but any purist or Italian will cringe. I could only get 151 proof Everclear here in California and it's plenty strong enough!)

3.5 cups of white sugar
5 cups of water
Zest the lemons, put them in a glass one-gallon jar with the alcohol and let it sit for 45 days. Then mix the sugar and water in a pot and bring to a boil for 5 min. Let the mixture sit until completely cool and then mix with the alcohol and lemon infusion. Let that mixture sit for 45 days. Then filter the mixture 4 times using #4 coffee filters. Bottle the liquid and put it in the freezer.
I got 3 bottles of limoncello out of this recipe.
It's very strong (even using only 151 proof Everclear) and very sweet. I might consider 4 cups of sugar and 6 cups of water next time.
Oh, and I made lemonade with the 17 lemons. The recipe I found was *way* too sweet, so next time I'll try these amounts:

1 1/2 to 2 cups of sugar (down from 3 cups)
3 cups of water
Heat the sugar and water in a saucepan until the sugar dissolves completely.
Juice the lemons and add the juice and sugar water to a pitcher. Then add 9-12 cups of cold water, and refrigerate.
You probably have an actual lemon tree, don't you?
