I first visited the Exploratorium in San Francisco when I was in 5th grade. It was off the touristy path a little bit, over in the Palace of Fine Arts. It's just finished a move to
new digs, where even more people will get a chance to become enthralled:

If you are ever in Dallas you MUST go see the Perot Museum. It's really amazing and interactive. It's a fascinating place for science and engineering. http://www.perotmuseum.org/
